From the mountainous Chiapas region in southern Mexico comes a coffee that delights with its juicy, fruity character and natural sweetness. Mexico Dragon is produced on the Santa Cruz farm near Villacorzo – a place where the warm climate, dense vegetation, and varying altitudes create ideal conditions for the aromatic coffee cherries to ripen.

The Caturra and Bourbon beans have been naturally processed, drying the fruit along with the pulp. This process allows the coffee to gain intensity and depth – a juicy fruitiness reminiscent of sea buckthorn and ripe plums emerges in the cup, offset by a pleasant, honeyed sweetness. The profile is full, soft, and very pleasant, with a fruity character that lingers long on the palate.

This coffee showcases the more expressive side of the Mexican terroir – intense, juicy, and incredibly approachable. Pour-over coffee can surprise with a wealth of aromas and a natural sweetness, making each cup taste like another sip of fruity summer.

Returns Policy

We absolutely believe in the quality of our products, but if you want to make a return, you can count on our help and full support.

How to do it?

  • Within 30 days of receiving your order, send us a message at sklep@lacava.pl with the following information: order number, returned items, pickup address and preferred pickup date, reason for return (optional)
  • We will send you a DPD courier waybill, which will collect the returned, packed items, and then you will receive a refund of the costs incurred within 14 days of us receiving the package.
  • You can of course bring the returned items to our coffee roastery
  • Returns are free of charge, unless you do not want to use our DPD courier, in which case you must send the parcel yourself
  • you can return all products as long as they are unused and the packaging is open

Unique drying process

Mexico Dragon was created by combining two classic Arabica varieties: Caturra and Bourbon. Both have been among the most important varieties cultivated in Latin America for decades and are prized for their balanced flavor profile and natural sweetness. Bourbon is one of the oldest and noblest Arabica coffee varieties. It is renowned for its high sensory quality – often bringing distinct sweetness, a soft body, and fruity notes to the cup. Many other well-known coffee varieties originate from Bourbon, and its genetics still form the foundation of many specialty coffees. Caturra, on the other hand, is a natural mutation of Bourbon, discovered in Brazil. It is characterized by a more compact plant growth, which facilitates cultivation, while retaining many of the best characteristics of its "family" – good acidity, a clear profile, and pleasant sweetness.

Natural processing

Santa Cruz

Crops on this farm extend from around 800 to 1400 meters above sea level, allowing the fruits to ripen at different rates and develop a complex flavor profile. The growers here focus on proven Arabica varieties like Bourbon and Caturra, as well as careful selection of ripe fruits during harvest. At Santa Cruz, great emphasis is also placed on proper coffee processing. In this case, the natural method was used, where the fruits are dried whole in the sun. This process allows the beans to absorb more of the fruit's sweetness from the pulp, giving the coffee a juicier, more intense character and richer aroma in the cup.

How to brew?

1. WEIGHT

We recommend using 18.5 grams of coffee per 300 grams of water. This will result in a juicy brew with a pleasant body.

2. GRIND

Select the grind size so that the brewing time is around 3 minutes and 30 seconds.

3. BREW

We recommend distributing water at 94˚C in 6 portions of 50 grams. After a 30-second pre-infusion, add water every 15 seconds.

4. WATCH

If the brewing time differs from the recommended time, or the flavor isn't to your liking, adjust the grinder settings next time you make your coffee. Let your taste and preferences guide you!
